Mini Banana Applesauce(?!) Muffins!




I had two really ripe bananas. SO ripe. so i needed to do something with them...but! i have three midterms next week so i needed a quick recipe! so i googled and found this wonderful recipe on allrecipes, which had simple ingredients!! plus the comments on the page gave the recipe lots of five stars so it made me trust it. i changed a couple things though, like using applesauce for one of the bananas because i only had two and the recipe called for three. i would make my own applesauce...but i'm not too crazy about applesauce. i think i really hated it as a kid actually. but anyway! these were super moist, probably because of the applesauce and the brown sugar that i decided to add in, so they were super good!!

so this is all you need to do!

Ingredients

1 1/2 cups of flour
1 teaspoon baking powder 
1 teaspoon baking soda
2 large bananas, cut in slices 
1 individual cup of applesauce, unsweetened!
1/2 cup brown sugar
1/4 cup white sugar
1 egg
1/3 cup butter, melted




oh yeah! preheat your oven to 350 degrees! 
ok. after you've done that, sift your flour, baking soda, baking powder, and sugar together in a bowl.



 i got a soft spot for brown sugar :]





next, cut out 1/3 cup of butter and melt it!






 just put it in the microwave for 15 seconds. look how beautiful that looks..

now take your egg, butter, bananas, and applesauce in a bowl and mix it thoroughly to combine. (the recipe wanted the bananas mashed but i like my bananas chunky! so i just slightly smushed them with my rubber spatula as i was mixing.)



 take the bowl with your sifted dry ingredients and dump it into your banana/applesauce mixture. don't overmix! it'll make your muffins nasty tough. to prevent overmixing, fold the dry ingredients into the wet ingredients!



if you don't know, folding is just a technique where you take your spoon, spatula or whatever you're using and just scrape the bottom of the mixture in one way, while rotating the bowl the opposite way and then...


 flip your spatula/spoon like this! hope that made sense...if not, google it :]


when your mixture looks like this, and it doesn't have pockets of dry ingredients, then it's ready for the mini muffin pans! 



oh yeah, i love putting cinnamon in muffins! i think i put in a teaspoon or two...



spray the bottom and sides of your pan with Pam, or use oil or butter, whichever you prefer.


     i accidentally sprayed my thumb. 
   scoop your batter in! i used my melon baller.



bake them in the 350 degree oven for 15 minutes.
bye bye muffins! 



 after 15 minutes have passed, take your trusty paring knife and stab one of your poor little muffins to see if there's any residue on the knife.



  no residue....?



done!



  mmm. look at those banana chunks! :]]
